Nothing says brunch quite like the holy trinity of Halloumi, eggs and avocado. And thanks to Jamie Oliver and his 7 ways cookbook, I’ve got the perfect brunch recipe for you. Halloumi eggy crumpets. If you’re a fan of eggy bread and brunch food. You’re going to love this one!

What we have is perfectly cooked eggy crumpets, topped with a fresh and spicy salsa, a fried egg, avocado and a fried halloumi nest. Delicious.

Truth be told I wasn’t sure about this one. I love brunch, don't get me wrong, halloumi gives me life. However, the thought of eggy crumpets with a fried egg on top? I didn’t get it. I love eggy bread but never thought about eggy crumpets. I’m more of a throw them in the toaster and slather with butter kinda person. 

But after making this, I can confirm. It works. It’s absolutely delicious. All those holes on top of the crumpets are the perfect little egg pockets. Then you have a just about fried egg on top so the yolk runs down. Perfection.

When it comes to breakfast/brunch recipes there's one thing we want most. Ease and time. We don’t want to be faffing around for hours prepping difficult recipes. We just want to throw something together.

That’s something this recipe has. It’s quick, from start to finish it takes about 10 minutes at a push. And it’s super easy to follow along with.

About the 7 ways by Jamie Oliver

Before we jump into the recipe. Let’s just cover the cookbook. As I mentioned before, this recipe comes straight out of Jamie Oliver’s newest cookbook 7 Ways. A book that at this point, I’m very familiar with.

The basic concept is that the main man himself Jamie Oliver, takes some of the most popular cooking ingredients, such as; eggs, cauliflower, chicken, fish, potatoes and so on. And shows us 7 different ways and meals to cook with those ingredients. Hence the name 7 ways

This format just works wonders. Lets face it, it’s very rare you buy an ingredient for a recipe and use the whole thing. What normally happens is you buy 1kg of potatoes, use less than a quarter, then the rest just stays at the back of your cupboard growing new potatoes till you next need them for a recipe. Which is when you realise they are probably a bit past their best and go buy more, then the cycle continues.

So having 7 recipes you can cook with that specific ingredient is a brilliant idea. A recipe for every day of the week.

Step by step Eggy Crumpets instructions with photos

1) Beat one egg in a shallow bowl, then add the crumpets to soak on both sides. It helps if you have a shallow but wide bowl so you can fit the crumpets in at the same time. This will save you time fiddling about with a small deep bowl

2) Whilst the crumpets are soaking, it’s onto the salsa! Quarter the tomatoes, then mix in a small bowl with the chilli sauce and a squeeze of lime. Season to perfection, then pick over the coriander leaves. Peel, chop and add the avocado, ready to toss just before serving.

3) Put a non-stick frying pan on medium heat with 1 tbsp of olive oil/butter if you prefer. Crack in the remaining egg, then add the crumpets alongside.

4) Flip the crumpets when golden and cook the egg to your liking. Move it all to your plate, then quickly coarsely grate the halloumi into the pan (my favourite part)

5) Toss the salsa and spoon over the crumpets. Once the halloumi is golden, use a fish slice to nudge it loose and flip it proudly over your plate, golden side up. Creating the perfect crunchy halloumi nest to sit on top of your crumpets. Finish with extra sauce, if you like.
