Vegetarian Sausage Casserole - Jamie Oliver 7 Ways Cookbook Recipe
Recently I wrote a review of my trusty cast iron casserole pan. Which is pretty much used for everything in my kitchen now. However, even though its specifically a casserole dish, I’ve never actually cooked a casserole in it…
So I dusted off my cookbooks and started skimming through for a good looking casserole recipe. The one I went with if you hadn’t guessed, was an easy sausage casserole from Jamie Oliver’s cookbook ‘7 ways’ with a vegetarian twist.

Vegetarian Sausage Casserole
The actual recipe for this sausage casserole is not a vegetarian one. But as it happens, the only meat I eat is fish. So of course I was always going to change it to a vegetarian recipe.
At first, I was going to share it straight from the book as it is with recommendations to make it vegetarian. But I feel as if not that many fellow vegetarians part-take in sausage casseroles.
Even though there's such a variety of vegetarian sausages available and vegetarian sausage casseroles are brilliant.
The recipes I have seen online for vegetarian sausage casseroles seem to be quite lacklustre.
That being said, I decided to share this as a vegetarian recipe but just know, you have the option to replace the vegetarian sausages with meat ones.
Cast Iron Casserole Dish
For this recipe you will need a casserole dish so you’re able to move your dish straight from the hob to the grill. Recently I’ve done a full review and recommendation of the casserole pan I use which you can find here.
But to sum up that post, if you want my recommendation on the best cast iron casserole pan and the one you will see in these photos. Then this is the one for if you’re UK based and this is the one if you’re USA based.
Step by Step Vegetarian Sausage Casserole Recipe
This is the step by step recipe for this vegetarian sausage casserole, if you want the full recipe card keep on scrolling to the bottom of this page.
Step 1
Place the sausages in a large non-stick casserole pan on a medium/high heat with a drizzle of olive oil. Brown your sausage for 10 minutes turning them regularly.
Step 2
Whilst your sausages are nicely sizzling away, peel your potatoes and chop them into small chunks. Cook them in a large pan of boiling salted water for 15 minutes or until tender.
Once cooked, strain your potatoes and leave them to steam dry.
Once your sausages have browned, transfer to a plate leaving the pan on the heat.
Step 3
Wash, trim and chop the your carrots and leaks into 2cm chunks. Stir into the fat in the same casserole pan you’ve just used for your sausages and cook for 15 minutes or until softened, stirring regularly. Add a splash of water if needed.
Stir in the HP sauce and half the mustard, then pour in the beans, juice and all. Add the tomatoes breaking them up with the back of a wooden spoon then stir in 1 tins worth of water.
Bring to a boil and cook for another 10 minutes, then season to perfection. Pre-heat your grill to high.
Step 4
Whilst you’re waiting for your casserole to cook up a storm, return to your cooked and now dry potatoes.
Mash them well adding the remaining half of mustard then season to perfection.
Once the mash is cool enough to handle, divide it into four compact balls.
After your casserole has been bubbling away for 10 minutes, its time to add those finishing touches. Season to perfection then return to your browned sausages. Score the sausages at 1/2 cm intervals and sit them cut side up in the casserole.
Push your mash balls into the casserole and brush the tops with a little olive oil. It should look like the photo below before grilling.
Grill on the top shelf of your oven for 15 minutes or until golden and bubbling.

- Place your sausages in a large non-stick casserole pan on a medium/high heat with a drizzle of olive oil and brown for 10 minutes, turning regularly. Then transfer to a plate.
- Peel your potatoes and chop them into small chunks. Add them to a pan of boiling salted water and cook for 15 minutes or until tender. Once cooked, strain and let them steam dry, then mash them with half the mustard and season to perfection.
- Wash, trim, and chop the carrots and leaks into 2cm chunks. Add them to your casserole pan and cook for 15 minutes until softened.
- Add the HP sauce and remaining mustard, then pour in the beans with the juice, 1 tins worth of water, and the plum tomatoes. Break the plum tomatoes up with the back of a spoon. Bring to a boil and cook for another 10 minutes then season to perfection.
- Preheat your grill to high and score your sausages in 1/2 cm intervals. Sit them score side up in your casserole.
- Divide your mash into 4 compact balls and push them into the casserole along with the sausages. Brush the tops with a little olive oil and grill for 15 minutes until bubbling and golden.
Notes
As far as sausage go, use whichever you like the taste of. Rosemary sausage actually pair really well.
