Grilled Halloumi and Bean Stew Recipe
Bean stew. Not the most exciting sounding meals but boy is it cheap!
Today, I’ll show you how you can take a boring bean stew and instantly add some excitement and flavour with the addition of a rich tomato base and perfectly grilled halloumi.
The Stew
The stew itself is super easy to make. Prep wise you just need to cut an onion, slice a block of halloumi and crack open a few cans. Couldn’t be easier.
Then once it gets to the actual making of the stew it’s even easier, with the majority of the time spent allowing the stew to simmer and thicken.
Perfect for if you have a busy life and don’t want to spend all your cook time in the kitchen.
Also perfect if you struggle with multiple step recipes.
The Grilled Halloumi
As for the grilled halloumi, this can be as simple or difficult as you want to make it. On one hand you can fire up an outside BBQ, smother your halloumi with seasoning and get to grilling. But let’s be honest, that isn’t half a pain in the neck to do.
Not to mention a lot of people like myself live in the UK where we have about 2 hours a year were we can comfortably BBQ foods without being drenched in rain…
Your two options really are to either fry your halloumi, which does work great, or use something like my favourite kitchen tech, the Ninja Foodi Max air fryer and grill, to perfectly grill your halloumi, grill lines and everything, in less then 5 minutes.

Vegetarian
Every recipe here on Smartblend is either going to be Vegetarian or Pescatarian. This grilled halloumi and bean stew in particular falling into the category of vegetarian.
I myself have been veggie since pretty much birth but that doesn’t mean I’m out to restrict anyone’s diets or comment on whether you eat meat or not.
If you are partial to meat, feel free to bulk this vegetarian grilled halloumi and bean stew out more by adding some of your favourite meat. But trust me, it doesn’t need it.
Making in bulk and reheating
This recipe works great for making in bulk and reheating. If reheating I wouldn’t make the halloumi, that’s going to taste best fresh.
What I would do is multiple the below recipe by 3, 5, or however much you want, depends how many people you’re feeding or how long you want it to last, then leave the halloumi and garlic bread until it comes to serving.
The great thing about making this in bulk is you can make it at the beginning of the week, then have it last all week long.
Each day you can mix up the serve so it feels fresh and not like you’re eating the same thing every single day. You could do something like this;
Monday: Bean stew with grilled halloumi
Tuesday: Bean stew with rice
Wednesday: Bean stew nachos
Thursday: Bean stew with toasted garlic bread
Friday: Bean stew with a grilled veggie salad
Saturday: Toasted sourdough bread topped with bean stew
Sunday: A well deserved break from bean stew
Budget vegetarian meal planning
That whole week might not be the most exciting of foodie weeks and you may start losing your mind the closer you get to Sunday, but my point is the bulk of your cooking is on Monday, leaving a week of barely being in the kitchen other then to cook the side dishes. Once again, great for busy people.
As well as the fact that it’s relatively healthy and it would be a weak of cheap eating.

Grilled Halloumi and Bean Stew
Ingredients
Instructions
- Heat some vegetable oil in a frying pan, once hot, add your diced onions and fry on a medium heat for 5-10 minutes or until softened.
- Once softened, drain and rinse your beans, add them into the pan along with your pesto, garlic and plum tomatoes. Use the back of a spoon to smush the plum tomatoes into the mix.
- Fill your empty can of tomatoes up with water and pour that in the pan along with your mixed herbs. Bring the mix to a boil then simmer for 20 minutes.
- Whilst your stew is simmering away, make a start on your garlic bread if using per packet instructions and slice your halloumi into 2 thin patties.
- Grill or fry your halloumi. I highly recommend using the Ninja Foodi Max to grill your halloumi, it’s a great piece of kitchen kit and is how I got the grill lines on my Halloumi after just 5 minutes of grilling. - Once your stew has simmered for 20 minutes, taste and season with salt and pepper, plus whatever seasonings you favour - I like a nice heaped teaspoon of paprika in mine along with a handful of black olives.
- Dish your stew into bowls and finish with your grilled halloumi and a side of garlic bread
