Mediterranean Halloumi Bake
Easy to make
Did I mention that it’s easy to make? Because it really is. Its quite the forgiving recipe in terms of what you can add to it.
The vegetable mix I’ve used which is included in the recipe below has a great mix of flavours and textures, but if there’s any one vegetable you love that’s not included (or is cheap) why not bang it in?
One-pot wonder
Another thing that makes this so easy is that you only need to use one pot.
That minimizes your washing up and means you don’t have to have a lot of things on the hob at the same time.
However what I will say, is that your one pot does need to be oven safe as we will be blasting it under the grill to get that halloumi nice and crunchy.
Don’t waste your time on cheaper dishes that will eventually need replacing and make your cooking life a living hell with inconstant heating and non stick bottoms.
Make the investment, buy a one of dish that will last a lifetime and you never have to worry about it breaking.
For this and all my one pot recipes I recommend a good cast iron casserole dish.

This recipe falls into the category of vegetarian comfort food. Another thing I like to do a lot here on Smartblend.
Once you taste it you’ll understand why, its rich, hearty, and completely vegetarian. All the necessary qualities of a comfort food dish.

Mediterranean Halloumi Bake

Instructions
- Add half the oil into a casserole dish on a medium heat. Once hot add your onion and cook for 5 minutes.
- Once the onion has softened, add in the garlic and cook for a further minute.
- Next, it's time to add in your Courgette, Aubergine, and quartered tomatoes along with the mixed herbs, paprika, cumin, and a pinch of salt and pepper. Cook for a further 5 minutes until the veggies have softened.
- Add your can of plumed tomatoes and squish them into the veggies with the back of a spoon. Fill the can to the top with water and dump that in as well. Bring the mixture to a boil, then cover with a lid and simmer for 15 minutes or until the sauce as reduced by half.
- Whilst your sauce is bubbling away, cut your halloumi into thin strips and rub them with the rest of your oil. Once your Mediterranean bake has reduced, taste, season with more salt and pepper if needed, then place the halloumi over the top and bang the whole thing under a grill for 5 minutes or until the halloumi gets nice and crispy.
Notes
For variations, try adding in some pitted green olives or topping your bake with fresh herbs. Any will work well but I prefer rosemary and basil for this recipe. However, this is not an essential.
You can also bring out richer tomato flavours by adding tomato puree, or up the 'comfort food level' by adding in a stock cube when topping up with water.
