I love this recipe, for many reasons. Firstly, mushrooms are delicious. Secondly, pasta is life.
Together they work perfectly. It works great for any occasion. With it being so easy and quick to make, you could easily whip it up for a large group of people or party (if you’re lucky enough to have that many friends that is) Great for families as well. Kids love it just make sure to burn off that wine, adults love it, fussy eaters love it. You cant go wrong.
Date night or dining alone.
It works wonderfully for both options. One thing you don’t want to be doing on a date night is spending an hour stressing over a stove. Wondering why your slow roasted Vietnamese lamb shanks don’t look like the photos on your recipe card. With this taking less then 10 minutes it means more time for that special one on one time with your significant other.
The same goes for dining alone. You just want to sit back and binge watch the the entire series of tiger king or whatever is big on Netflix at the time. You don’t want to be sweating in a kitchen.
Quick doesn’t mean it taste less delicious then a slow cooked meal by the way. Keep that in mind. This recipe takes less then 10 minutes to prep and cook, yet is one of my favourite dishes to make.

What is tagliatelle
Tagliatelle is a traditional Italian pasta. Individual tagliatelle are long and flat ribbon shapes (Think spaghetti that has been ran over)
The name tagliatelle stems from the traditional way of making these pasta ribbons. This is usually done by rolling out the dough into fairly thin sheets and cutting (tagliare in Italian) ribbons from them by hand.
Tagliatelle is an egg pasta. Made by combining flour and eggs with oil.
Its similar in shape and taste to fettuccine. The difference being fettuccine is thinner then tagliatelle.
Cooking Tips
Cook the tagliatelle pasta 1 minute less then cooking instructions. If it says 3 minutes, cook for 2. The pasta will cook the rest of the way in the garlic mushroom sauce.
Don’t pile up the mushroom on top of each other in the pan. Spread them out so they all have surface contact with the hot pan to allow them to cook fully. It helps if you have a wide pan like this.
No Parmesan? no worries. The Parmesan cheese is an optional addition. The dish works perfectly without it. It just adds a bit of extra flavour for us cheese lovers. If you don’t have Parmesan or are vegetarian. Finely grated mature cheddar will do fine.
Recipe Variations
Try whichever mushrooms you like. But to really add a bit of fancy attitude to your tagliatelle try adding a variety of different mushrooms.
Don’t like tagliatelle? Then why are you here? Like, seriously, how did you get to this part of this recipe if you don’t even like tagliatelle, without exiting out?
No but seriously. You can try this with different forms of pasta, and not just pasta similar to tagliatelle like linguine or fettuccine.

Ingredients
Instructions
- Sauté the onions in olive oil for 1 minute, then add garlic and sauté for a further minute.
- Meanwhile. Cook the tagliatelle in salted water to packet instructions
- Add mushrooms and butter to the frying pan with the onions and garlic. Cook until butter has melted.
- Add the cream and wine and cook till liquid has reduced by half on a medium/high heat.
- Add the cooked tagliatelle, salt, pepper, and parsley. Serve with Parmesan cheese.
Notes
If you're using fresh parsley, chop finely before adding.
If you're vegetarian, make sure you check your cheese. Parmesan is not suitable for vegetarians but you can get vegetarian alternatives.

Creamy garlic mushroom tagliatelle step by step
Step one
Add the olive oil to a pan or wok and heat on a medium heat.
Once the oil is heated, add the chopped onions and saute for 1 minute.
Step two
Add the garlic and fry for another minute whilst stirring.
Whilst the onions and garlic are frying, begin to cook the tagliatelle pasta in another pan filled with boiling salted water. The tagliatelle should only take around 3 minutes to cook. Check the cooking instructions on the packaging.
You want to cook the pasta for 1 minute less then what it says on the packet.
Step three
Moving your attention back to the onions and garlic. It’s now time to add the chopped mushrooms and butter. Fry until the butter has melted and the mushrooms have browned.
Step four
Once the butter has melted, add the white wine and cream.
At this point feel free to pour yourself a glass of white wine. Tell yourself its an aperitif. preparing the palette sort of speak. Whatever excuse you need to justify your drinking.
Simmer until the liquid has reduced by half whilst stirring every so often.
Step five
After the tagliatelle is 1 minute from being cooked, strain out the water ready for adding to the garlic butter and mushrooms.
Once the liquid in your mushroom and garlic butter has reduced by half and has started to thicken up, add in the tagliatelle and stir through.
Step six
Turn the heat to low, add the parsley then salt and pepper to taste. If there are any other seasoning you want to add, this is the point to do so. Give a final stir through before turning of the heat and plating up.
Step seven
Its time to plate up! Serve with Parmesan cheese to taste. If you prefer you can add a finely grated mature cheddar. Or, add nothing at all and viola! Your garlic butter and mushroom tagliatelle pasta is ready to be eaten.
