Best Greek-style Baked Cod Recipe Ever!

Baked cod is one of the most popular fish recipes. It’s not hard to see why. Cod is a very accessible and affordable fish, on top of that, throwing it in the oven couldn’t be any easier.

Cooking fish can tend to be intimidating but cod is a breeze.

With that being said, there's a hell of a lot of baked cod recipes out there. So many in fact I was torn about sharing this recipe as it’s likely just going to get buried beneath hundreds of other baked cod recipes from the likes of BBC good food, The Food Network, Tasty and all the other high ranking food websites.

However, given I’m a big fish fan, I’ve baked a fair few cod fillets in my time and I have really perfected a recipe that suits me.

So much so I thought I just have to share it. It’s delicious, fragrant and has a wonderful texture. If just one person decides to cook this recipe and if that person is anything like me then they will love it. So screw the big foodie guys and their competition, I’m doing a baked cod recipe!

Easy to make

Another thing to mention about this recipe is it’s easy to make. Throughout the hundreds of baked cod recipes you will find, you will see they range from as easy as adding a few wedges of lemon and baking it in the oven - all the way to the more “chefy” complicated bakes. 

This is a nice in between. More work then just shoving it in the oven but quick and easy to follow along with.

What to serve with?

The beauty of this recipe is it works well with a number of side dishes. Its actually quite hard to narrow the list down to just a few.

Fish is high in protein and low in carbs so it works well to balance it out with something carby.

You could go for a healthier option, such as Asparagus or roasted vegetables. Or you could go more carb heavy with something like chips, which you can sprinkle with the same herb mixture to make an elevated fish and chips meal.

You could also stick with the humble potato and do some mini baked potatoes.
Or you could go far on the healthy side and serve it with a greek style feta, olive and tomato salad or rice. Or far on the other side and go with pasta. Personally, I went with a classic. Rice.

Ingredients

Instructions

  1. Preheat oven to 200c (180 fan)
  2. Mix the lemon juice, olive oil, and melted butter in a bowl and Set aside.
  3. In another bowl, mix all-purpose flour, spices, salt and pepper (not the herbs).
  4. Pat the cod fillets dry. Dip cod in the lemon juice mixture then dip in the flour mixture. Shake off excess flour. Reserve the lemon juice mixture for later.
  5. Heat a dash of olive oil in a frying pan over medium-high heat and heat the oil. Add fish and sear on each side to give it some colour, but do not fully cook, about 2 mins on both sides. Remove from heat.
  6. Mince the garlic or use a garlic press and add to the lemon and olive oil mixture. Mix and drizzle all over the fish fillets.
  7. Wrap the now garlic and lemon mixture fish in foil parcels.
  8. Bake in the heated oven until it begins to flake easily with a fork about 10 minutes. Remove from heat and sprinkle chopped parsley and dried herbs. Serve immediately.
