I’m back again with another sustainable drinks recipe. This time, we are talking pea shoots. The completely edible by-product of growing peas that boast an array of nutritional value and delicious garden freshness to any drink in which they are added.
What are Pea Shoots?
Pea shoots are the small leaves that grow alongside the common pea plant. Whilst peas will take a whole summer to grow, the leaves can be ready to harvest after just a few weeks.
Pea shoots are completely edible, easy to grow, and taste much like their namesake but with a much more subtle and grass forward flavour. Making them perfect for drink recipes.
They look brilliant used as garnishes for many dishes and drinks and boast seven times more vitamin C than blueberries.
How does Pea Shoot Cordial taste?
Pea shoots taste unsurprisingly like fresh English peas. However, unlike peas they have a crisp, sweet and grassy flavour. Those added notes of grass and earthiness makes this work perfectly in a cordial recipe like this.
Adding the lemon juice gives a sour bite and that sweetness balances and those earthy flavours making this cordial the perfect addition to any cocktail or drink that you want to give a sweet grassy note to.
Pea shoot cordial recipe
Without further ado, here is the recipe for my pea shoot cordial. Skim through this recipe and gather your ingredients. Other than the “waiting to cool” part of this it’s a very quick recipe and super simple to make.
Ingredients
30grams Pea shoots
500ml Water
500grams Granulated sugar
50ml Fresh Lemon juice
Method
Add the water and sugar to a saucepan and slowly bring to a boil whilst stirring.
Once all the sugar has dissolved and the mix is clear, stir in your pea shoots.
Take off the heat and allow the mixture to infuse whilst cooling for 30 minutes.
Strain out the pea shoots and stir in the fresh lemon juice.
Bottle and refrigerate.
Tips & Tricks
Because of the lemon juice within this recipe, your cordial will last up to 2 weeks refrigerated. If you want your pea shoot cordial to last longer, you can add 2-5 grams of citric acid in place of the lemon juice. The flavour will stay the same but the cordial will last much longer.
Making sure to fully fine strain your cordial will also help it stay fresher for longer. You could also add 50ml of vodka to keep any nasty bacteria making its way into your cordial. Even in non-alcoholic drink recipes, the overall ABV of the drink will still be <0.5%

Ingredients
20ml Pea Shoot Cordial
250ml Sparkling water
Method
Pour ingredients into a tall glass over ice.
Give a light stir and garnish with pea shoots or a lemon wedge
