Recently, I’ve began work with collaboration with Three Spirit. Three Spirit is a London based producer of delicious, vegan, sustainable and non-alcoholic beverages. Beverages that hold all the craft and complexities of hard-hitting drinks but without the booze.
The perfect base for complex yet accessible non alcoholic cocktails, but by no means only non-alcoholic cocktails.
I’ve personally played around with three spirits in booze heavy drinks to add a dash of functionality and complex flavour. The beauty of these drinks is that they are so interesting and deep with flavour that they will hold up and shine through just about any mix.
Another thing I have found to really love about Three Spirit drinks is the versatility of there functionality. You have a range of three products. Livener, Social Elixir and Nightcap. Each one specifically designed for a different need and time of day.
Livener is designed for a natural energy boost, perfect for the morning or as a pre-drink.
Social Elixir is the perfect party drink without the hangover.
Nightcap is perfect for stress relieving, Anxiety reducing and you guessed it, sleep.
With such a vast range of versatility there really is something for everyone. Whether you are completely sober and on the look out for something complex and flavoursome, or whether you are sober-curious or a fellow mindful drinking on the look out for a party drink alternative.
Functional cocktail recipes
Functional cocktail recipes is something that I talk a lot about as the mindful mixologist. I’m always on the lookout for drinks that have amazing flavours but also add some kind of functionality. Something I can drink that will be both beneficial to me, and delicious. The three drink range tick all those boxes perfectly.
Accessibility
A big thing for me when I’m both creating and sharing cocktail recipes is the level of accessibility. I don’t want to share things that are so basic you have heard of it a million times before. I also don’t want to share something with difficult to source ingredients that you will never be able to get your hands on. I’m always striving for that balance of interest, complexity and creativity, but at a level that even the most basic home bartender could re-create with ease and enjoyment.
Three spirit is perfect for that because they do a lot of the ground work for you. Sciencing around to create beverages with both hard to use and accessible ingredients, creating the functionality and the flavour in a well balanced way so all you need to do is simply mix, sip and enjoy.

With all that being said, I’ve used each one of the three spirit range to create an accessible masterclass video for you, for free, so you can pick up the range of three spirit and start re-creating, mixing and enjoying my functional cocktail recipes at home with ease. All the flavour, all the character and all the complexities of high end and hard hitting cocktails, with non of the booze or stress.

#1 Dream Catcher
A warm sipper perfect for having before bed, in times of stress and when you need a well deserved break.
Three Spirit Nightcap
For this recipe we'll be using Three Spirit Nightcap, This non alcoholic Elixir is made up of an array of functional ingredients designed to help relieve stress and soothe the mind.
The good folks at Three Spirit do this by combining the soothing flavour of lemon balm with an natural powerhouse ingredient - Valerian root.
Valerian is a herb that's most commonly used in sleep remedies. A lot of stress, anxiety and sleep medicines utilize valerian for its ability to act as a sedative on the mind and nervous system. The problem with valerian that I’ve always found is it doesn’t taste very nice. Three spirit balances a good dose of valerian with a number of other ingredients including turmeric, liquorice root and maple syrup to create a functional drink that not only tastes amazing, but is functional.
This works perfectly on its own sipped over ice. But we are going to play around with the flavour here to lengthen, emphasise and soften three spirits Nightcap in a cocktail I’m calling the Dream Catcher, as one of these before bed will fill your night with soft soothing sleep.
Dream Catcher Recipe
Ingredients
50ml Nightcap
1tbs Dried Lavender
100ml Hot water
Method
Pour 100ml of hot water over 1tbs of dried lavender and allow to infuse for 1-2 minutes. Once infused add in 50ml of nightcap and stir to combine.
Got a sweet tooth? At this point you can add half a tsp of sugar or sugar alternative such as honey.
Strain into a heatproof glass and garnish with a sprinkle of dried lavender buds or gypsophila.
Sit back, put your feet up and relax.
Top Tip:
If using fresh lavender as opposed to dried, simply use one sprig of lavender, starting at the base of the stem and pointed over your glass, pull the lavender sprig through your index finger and thumb. The lavender buds should fall right into your glass. One sprig will be the optimal amount but if you fancy a bigger lavender kick, feel free to use more!

#2 High tea
Summer is approaching thick and fast which means its time to indulge in delicious summer cocktails. With plenty of day drinking ahead of us you may want to cut back on the alcohol intake whilst still indulging in delicious summer drinks. This non-alcoholic take on a summer spritz is perfect for doing just that.
Three Spirit Livener
For this recipe, we will use another drink from the three spirit range which is there Three Spirit Livener.
Livener is the perfect start to any day or drinking session, its non-alcoholic yet packs a punch. Making it perfect for the sober, or the mindful drinker looking to start the day of with a non-alcoholic cocktail. Livener packs an array of energizing ingredients for a natural energy boost such as Ginseng, green tea and cayenne pepper. All of which are beautifully balanced with ingredients such as watermelon, rose water and guava leaf.
The way we are going to focus on those energy boosting functional ingredients is by sticking with the theme of tea, in a summer spritz and non alcoholic fashion.
High Tea Cocktail Recipe
Ingredients
40ml Livener
50ml Chilled fruity tea (white peach and oolong, hibiscus, guava, blueberry, whatever your preference is)
20ml Lemon juice
Top with soda
Method
Pour everything apart from the soda into a cocktail shaker along with a handful of cubed ice
Shake till cold and combined then strain into a tall glass filled with fresh cubed ice.
Top with soda water and give a light stir to combine.
Garnish with a charred peach and sprig of fresh mint.
Top tips:
You can char your peach garnish many of ways. Try using a BBQ for optimal charring. Don’t have a BBQ? Stick your peach under a hot grill for a few minutes. Don’t want to do that? Then use a blowtorch up and down your peach till the sides begin to char.
Which “fruity tea” to use? Any that you enjoy. You could use a oolong tea with white peach notes for a soft and subtle fruity tea flavour, or you could go full fruity with a dried guava, pineapple and mango loose tea. Somewhere in between would be a hibiscus or rose tea, perfect to bring out the floral notes in three spirits.
Instead of buying packaged mint sprigs buy potted mint, its super easy to look after, grows easily, is low maintenance, waste free and will give you the freshest mint flavour imaginable.
Fancy moving on to something low ABV? If you’re an alcohol drinker and want to turn this non-alcoholic tipple into something low abv, swap the soda for prosecco and sit back and enjoy, sun preferred but not essential.

#3 Aloe Aloe!
A fun and functional cocktail perfect to get the party started!
Three Spirit Social Elixir
For this cocktail we will be pairing Three Spirits Social Elixir with Aloe Vera. Social Elixir is three spirits mood boosting beverage made with powerful ingredients such as lion’s mane mushroom, yerba mate and damiana. The perfect mood elevator.
Aloe Aloe! Cocktail Recipe
Ingredients
40ml Three Spirit Social Elixir
50ml Aloe vera Juice
25ml Lime juice
10ml Ginger infused Agave recipe below
Method
Shake everything in a cocktail shaker with ice and strain into a rocks glass filled with cubed ice.
Garnish with 3 pineapple leaves
Top tips
As you will see from the below ginger infused agave recipe, the syrup is very easy to make. However, perhaps you just can’t be bothered to do it, then not a worry. Add a wheel of ginger to your shaker along with 10ml of agave syrup before shaking.
You can also swap the agave out completely for honey which depending on your choice of honey, will give a more floral or even fruity note to the cocktail.
Want to get the perfect pineapple leaf garnish? Instead of plucking your leaf directly from the pineapple and plonking it in your drink, try turning it round and trimming it. You will find that when you pull a leaf from a pineapple, the bottom is almost completely white. Trim that into a point and use that part pointing out your cocktail, the white fade into green is a lot more aesthetically pleasing than the regular dark block green.

How to make ginger infused agave at home
Ingredients
200g Agave syrup
100g Water
30g Ginger root, skinned and chopped into small pieces
Method
Mix the water and agave syrup together in a saucepan on medium heat.
Once all the liquid has combined into a single consistency, stir in the ginger pieces and simmer for 10 minutes.
Take off the heat and allow to cool at room temperature. Once cooled strain out the ginger and bottle your syrup.
