Mushroom Fajitas
Ah, Fajitas. Not just fun to say, but an absolutely delicious Mexican classic.
Mushroom’s go great in fajitas, they’re savoury, umami, earthy flavour pairs perfectly with guacamole and spice.
The texture works wonderfully in a tortilla wrap as well. These mushroom fajitas make for a deliciously yummy, vegetarian, plant based meal which is easy to cook and more importantly, quick! They only take 10 minutes to go from pan to table.

These mushroom fajitas particularly should take no longer than 10 minutes. 15 minutes if you opt to make your own guacamole or spice mix. Which is a lot easier than you may think.
For the guacamole recipe. It’s just a case of smashing avocados with lime juice and red onion. For the fajita spice mix, its just mixing together some seasonings that you most likely have in the back of your cupboard.
Once you have a go at making your own guacamole. You will never buy your guacamole from a stop again. If not because of the ease, then because of the price difference.
unless you’re hungover, in which you’re probably just going to buy it.
Being such a quick recipe. These mushroom fajitas are perfect for a quick dinner or for those times when you’re too busy to cook but still want a delicious meal.
Easy to make
Not only are mushroom fajitas quick to make, they're also easy to make. I don't mean that in a “difficult to prep for, but once you’ve spent an hour preparing the ingredients they are then easy to put together” way either. The whole process of mushroom fajitas is easy and quick.
All the ingredients are things that most people have in there fridges or cupboards already, especially vegetarians. And if not, are easy to find at any supermarket or corner shop.
Vegetarian without the substitute
Don’t you hate when a vegetarian recipe is just a meat recipe that's been substituted? Because I sure do.
Eating a plant based vegetarian meal shouldn’t mean substituting ingredients to make it vegetarian. This recipe has been made with the vegetables as the star.
So theirs no fake meat or meat substitutes involved in this recipe. It works as its own recipe and just so happens to also be vegetarian.
Don’t get me wrong, you don’t have to be vegetarian to enjoy these mushroom fajitas. That's the beauty of it. You can change this recipe to suit your own taste. It just so happens that this recipe is vegetarian how I've done it.
By all means, add meat if you want or even add more vegetables. Try out this recipe as it is. Then next time add or take away ingredients to suit your taste.

One pan wonder
Another great point to make about this recipe, is that it's all cooked in one pan. Meaning minimal clean up.
Which is always a plus for any recipe. Am I right? Cleaning up is easily the worse part of cooking.
So, if you’re anything like me and don’t like cleaning up piles of pans and cooking utensils. You’ll be happy to know you can make this whole thing with only one pan. I know what you’re thinking. “But what about the plate I use to serve my fajitas” Just get hands on, who needs a plate anyway!?
Mushroom Fajitas
Ingredients
Instructions
- Heat the olive oil in a large pan over medium heat. Once hot add the red onion, yellow bell pepper, and mushrooms. Cook for 3 minutes or until the vegetables are tender and wilted.
- Add the fajita seasoning and simmer for 5 minutes whilst stirring occasionally.
- Heat the tortillas in a microwave for 40 seconds or oven for 3 minutes on a low heat.
- Add the vegetable mix to the centre of a warm tortilla.
- Add guacamole and cheese to taste, sprinkle with spring onions, fold, wrap the tortilla and enjoy!
- Destone the avocados, scoop out the insides and place on a chopping board along with the chopped red onion.
- Start chopping the two together till fine and well combined.
- Add the olive oil and juice from the lime. Season to taste, black pepper and salt goes without saying however cayenne pepper works wonders. Don’t be afraid to get creative with your seasoning.
- Mix well and continue to chop till you get a fine consistency or as consistency that you like.
- Mix all the ingredients together in a jar.
- That’s it. You’re done.
Notes
The guacamole and fajita seasoning mix are optional. Feel free to use your own favoured seasonings and shop bought guacamole. But if you've never tried it before I recommend you do. Homemade guacamole is easy to make and will always taste better then shop bought just because of how fresh the avocados are and how much control over the added ingredients and consistency you have.
As for the fajita mix, you can fill a jar with that and always have it on hand for future recipes. Not just fajitas, it works great with a bunch of recipes. Mexican cuisine is an obvious choice but also barbecued food and Indian food will work well with it.
