  • A mix of gluten-free flours (available in most supermarkets)- 1 cup

  • Plant-based organic butter at room temperature- 3/4th of a cup

  • Organic brown sugar: 3/4th of a cup

  • One teaspoon of baking powder (you can adjust it as per your desired consistency)

  • Almond milk or soy milk: 2-5 tablespoons.

  • Organic food dye, if you want to infuse some colour

  • 2 teaspoons of vanilla extract for flavour

  • Salt: 1/4th teaspoon

Recipe

Whisk the flour blend, baking powder and salt together in a mixing bowl with a hand or electric whisk.

Now whip the butter with the organic sugar for two minutes. The vanilla extract is to be mixed and the mixture beaten until the essence fully blends.

Add the dry mixture to the buttery mixture, slowly until soft dough is formed.

Divide the dough into two halves and sprinkle flour on each, rolling them with a rolling pin on parchment paper.

With a cartoon-shaped cookie cutter, cut out your favourite shapes and bake for 10 minutes. Take them out when they have developed golden-brown hue at the edges.

Cool the cookies and serve!

Ingredients

  • Rolled oats or oatmeal (the top cereal brands will certify their oat products as certified gluten-free): 1 cup

  • Flour (gluten-free blend): 1 cup

  • Apples: 2

  • Grated apple: 1 ½ cup

  • Raisins: 1 cup

  • Coconut oil: 1/2 cup
